2026/27 Flavor & Trend Forecast
December 16, 2025 | TRENDS
Food and beverage trends are evolving at unprecedented speed, and consumers expect foodservice and CPG brands to keep pace. While new tastes and culinary exploration continue to drive trial, demand is rapidly growing for products that deliver better-for-you functionality and clean, transparent labels. According to the IFIC (International Food Information Council), nearly half of consumers say they will no longer consider a product that contains artificial colors or flavors, clearly signaling that the market is shifting towards elevated, mindful innovation. Below is a preview of the major trends guiding the future of flavor in the coming years.
Powerhouse Protein
With the rising popularity of GLP-1 medications, it’s no surprise that protein continues to dominate food and beverage innovation. Brands are responding with launches that spotlight protein across diverse categories, giving consumers more ways to incorporate it throughout the day. Propel is tapping into convenience with single-serve packets of clear whey protein, available in refreshing options like watermelon mint, that easily mix into water and deliver 20 grams per serving. Brands like Protein Pints and Pop-Tarts are pushing into the better-for-you space with high-protein versions of their classics, while Starbucks has helped mainstream the trend with offerings like protein cold foam and protein-boosted lattes.
Trendsetters: Propel, True Story, Starbucks, Protein Pints, Pop-Tarts
Swicy (Sweet & Spicy)
This bold combo often takes inspiration from global cuisines and is expanding to include the full CPG portfolio. As the trend evolves, expect tangy notes and savory umami elements to join the mix, creating layered, memorable flavor experiences that keep consumers coming back for more. Big Tree Farms, the Bali-based coconut nectar supplier, made its debut in the BBQ aisle this year with a trio of tropical-inspired spicy-sweet sauces, while ¡Yo Quiero! delivers a fresh take on sweet heat with its candied jalapeño dips. In confectionery, Skittles and Huer Foods, partnering with Frank’s RedHot, are pushing the category forward: Skittles with their tangy, chili-dusted fuego gummies, and Huer with fruity gummy bears coated in Frank’s signature seasoning blend.
Trendsetters: Skittles, Naughty Bali BBQ Sauce, Cheez-It, Yo Quiero!, Huer Foods/Frank’s Red Hot
Functional Health
Consumers are increasingly prioritizing holistic wellness, seeking products that support not only physical health but emotional and mental well-being as well. They’re looking for more “better for you” options that include functional ingredients to help them feel their best inside and out. Brands like Halfday and :ratio are leaning into this shift by introducing products fortified with added fiber, while Tropicana aims to revitalize the challenged juice category with a new lineup of reduced-sugar blends. Adaptogens, especially mushroom-based ingredients, continue to gain traction across formats, and U.S. brand Two River advanced the space this year with the launch of the nation’s first Lion’s Mane Mushroom Broth.
Trendsetters: Halfday Tea, :ratio, Two River Mushroom Broth, Suja Organic, Tropicana
